Bagged and upside down for a long time. Towards the end, flip upright and lots of butter.

Another tip on frying: don't use a Butterball turkey. They're full of butter and will screw up your oil.

I can't believe you guys would rather have a greasy fried bird over smoked.

Can't resist. Make sure and read to the bottom:
Here is a turkey recipe that also includes the use of popcorn as a stuffing -imagine that. When I found this recipe, I thought it was perfect for people like me, who just are not sure how to tell when poultry is thoroughly cooked, but not dried out. Give this a try. 10-12 lb. Turkey 1 cup melted butter 1 bag stuffing (Pepperidge Farm is good.) 1 cup uncooked popcorn (ORVILLE REDENBACHER'S LOW FAT) Salt/pepper to taste Preheat oven to 350 degrees. Brush turkey well with melted butter, salt, and pepper. Fill cavity with stuffing and popcorn. Place in baking pan with the neck end toward the back of the oven. Listen for the popping sounds.? When the turkey's ass blows the oven door open and the bird flies across the room, it's done.

Obviously you never had one deep fried. They are moist to perfection, with a crispy skin. Not greasy at all

I go to the food networks website and search for a good recipe. Last year i used one of emerald's recipes to make a ham, it came out killer and everyone still remembers it this year.

Mom's by a mile, my wife had a similar teacher. Thanksgiving wouldn't be the same any other way.
