Another tip on frying: don't use a Butterball turkey. They're full of butter and will screw up your oil.

Brine the bird overnite, inject, rub & deep fry. Alton Brown has a great recipe on line.

Can't resist. Make sure and read to the bottom:

Here is a turkey recipe that also includes the use of popcorn as a
stuffing -imagine that. When I found this recipe, I thought it was
perfect for people like me, who just are not sure how to tell when
poultry is thoroughly cooked, but not dried out. Give this a try.

10-12 lb.
Turkey
1 cup melted butter
1 bag stuffing (Pepperidge Farm is good.)
1 cup uncooked popcorn (ORVILLE REDENBACHER'S LOW FAT)
Salt/pepper to taste
Preheat oven to 350 degrees. Brush turkey well with
melted butter, salt, and pepper. Fill cavity with stuffing
and popcorn. Place in baking pan with the neck end
toward the back of the oven.

Listen for the popping sounds.? When the turkey's ass
blows the oven door open and the bird flies across the room, it's done.

Obviously you never had one deep fried. They are moist to perfection, with a crispy skin. Not greasy at all

I go to the food networks website and search for a good recipe. Last year i used one of emerald's recipes to make a ham, it came out killer and everyone still remembers it this year.

Deep fried useing peanut oil and injected with cajun spices..............yuuuuum yuuuuum!!!! A 12-13 lb. bird is done in less than an hour and is not greasy.

+100 Made one with a Cajun Butter flavor that is injected.....Moist, tender and full of flavor..... Don't know if you can do the stuffing like hush puppies or not but that was an idea I thought of trying out this year.....
