Just had a simple but fabulous meal courtesy of my buddy Rusty

Invited my buddy Rusty over for dinner since his wife is out of town getting check up at MD Anderson in Houston. Instead he volunteered to come over and cook for me and the missus. Brought all the food with him. A simple meal of broiled lamb chops marinated in white wine, butter, worchestershire, and lemon juice, steamed green beens, and potatos Rusty (cooked in a cast iron skillet in oven with salt/pepper/oregano/basil/butter/asiago cheese....yum yum.

Chops were from Colorado...3" thick!!!

OMG! Delicious.

One of the best simple meals I ever had was cooked by a buddy as well. Salmon and eggs with venison from WA. state a farmer sawed up, froze and sent to L.A.

The deer wasn't shot, btw, but hit by a semi.

The accompanying beer was Guinness.

Hey Jim, I'd be tossing the wifes friend out on her azz and have Rusty stay over the weekend instead. At least youd get great meals out of it!

No problem;

Potatos Rusty

2 large idaho potatos, peeled and sliced about 1/4" thick
Soak potatos in cold water about 15 minutes
Drain, pat dry
Butter cast iron skillet
Put down layer of potatos. Brush with butter; season with salt, pepper, oregano, basil. Top with shredded Asiago cheese. Repeat with another layer/butter/seasoning/cheese...until skillet is full.

Cut out a piece of wax paper the size of your skillet (he swears this is a necessary step to assure potatoes don't dry out). Cook potatoes on cooktop on medium high heat with wax paper cover acting as a loose lid until you smell the bottom begin to brown.

Remove wax paper and bake in oven for 35-40 minutes at 350 degrees. Finish with a few minutes under broiler to brown cheese on top layer.

Remove from oven and go around edge of skillet with knife to make sure potatos are not stick. Place plate over skillet and invert. You can leave it this way until ready to serve and it will keep potatos warm. remove skillet when ready to serve.

Sounds complicated but very simple.

Another potato recipe i like:

Roasted Rosemary New Potatos

Wash new potatos, dice with skin on into bite sized cubes. Toss in olive oil. Seaon with seasoned salt, fresh ground pepper, and lots of rosemary and toss. Cook at 350 degress in uncovered casserole dish for 45 minutes tossing occasionally. Broil for a few minutes to brown tops before serving. Easy oeasy and delicious.

Thats making me hungry and I'm on a diet, neet way to do the spuds. Does Rusty have a recipe for Borsch soup? Any body have one?

Put one medium sized borsch in a pot full of boiling water. Stir occasionally, season to taste

Oh wait, that's borsch stew. Never mind.
