Another good meal at Dueller's...made it myself this time: Brisket cooked with....
 
Sweet potatos, caramelized onions, dried apricots and plums in a honey/balsamic/ginger sauce in a dutch oven. Green beans as a side with yeast rolls. Beaujelais noveaux wine.

Vanilla ice cream with raspberry/balsamic vinegar topping and chicory coffee for desert.

Hey - what does Chicory coffee taste like? Bear in mind, that I don't know what Chicory tastes like - LOL!

Sounds much more cultured than the chicken & dumplings I am supposed to make tomorrow for lunch. My wife has a Vietnamese friend coming over, and that's what she requested.

I don't care for straight chicory, tastes kind of bitter to me, as does decaf coffee. Like half chicory/half coffee is okay, just tastes like coffee but with a better texture, if that makes any sense.

Cafe du Monde sells a chicory/coffee mix as grounds in a can that is supposed to be pretty good. I always liked their coffee and beignets, but never had them when I was not pretty hammered on booze.

Actually pretty simple compared to home made chicken and dumplings. Just browned both sides of a brisket trimmed of fat in a few tblspoons of oil in the dutch oven. Removed brisket and browned onions in drippings. Put brisket on top of onions and pour in a sauce made of canned beef broth, balsamic vinegar, honey, cinamon, ginger, and clove. Cook covered in in 350 degree oven for 2 hours. Add 2 lbs of cubed sweet potatos, dried apricots, and dried plums (aka prunes) and cook for another hour. Pull brisket and slice, remove sweet potatos and fruit with slotted spoon and serve on side. Use broth as a sauce on side. Unique blend of flavors. Easy peasy.

Someone gave me the bottle of raspberry balsamic vinegar and recommended trying it over vanilla ice cream. Actually a very good combo believe it or not.

It does have a bit of bitterness but not in a bad way. Straight chickory is too bitter. I like a blend with dark roast coffee...drop me your addy and I'll send you a bag of NOLA blend if you can't get it out there.

Our daily coffee at home is Cafe Dumond. Order it by the case.
