Looks great! Delicious and well-plated. What is gambieri? I'm not sure about the beet carpaccio rather than beef carpaccio but it sure is elegant. I bow to you.

looks great but it wouldn't fill up a ten year old, I could eat all 3 plates and still be looking for more, where's the meat? takes an hour to prepare and 2 minutes to eat, not my idea of time management, presentation is nice, taste is probably top notch, just not enough of it to feed a desk jockey on a diet.

Actually, if you were used to eating it, it would fill you up.

That's a huge part of the problem is that people think they need to eat a ton of food. THat's rarely the case.

Potato Pancakes: peel and grate potatoes, squeeze out water and combine with one or two beaten eggs, chopped chives, salt and pepper, and fry lightly (medium) in a little olive oil.

Pasta: regular spaghetti vongole recipe—but I added some freshly steamed crayfish. And some grated parmesan (even though this is taboo in Italy for seafood pasta).

I used to hate beets but have been using them more, initially for the rich red color and increasingly for the taste which I've been liking better. I usually have them julienneed or in small cubes. Still mostly a visual/garnish for me but I have to open my mind.

Did you slice the beets w/ a mandolin? Otherwise I double-bow to your knife skills.

The potato pancakes sound like a swiss roesti but with egg binder instead of cheese. I love roesti, so I'm sure I've love your pancakes too. They will fit in a FedEX box, you know.

Mandolin. You want them really thin.

This is a brilliant appetizer BTW. Always a hit—even with sceptics...

young people need to know, preparing a meal like that can get you laid.
