BAKERS! can i mix cake batter without a stand mixer?

i refuse to pony up the $$ for a stand mixer. i have a glock and a toyota suspension lift on the wishlist, and i need to stay the course.

two cakes i want to make..lemon layer cake, and a red velvet cake. everyone uses a standmixer. can i get my with a handmixer?

onlycafe 02-25-2010 06:01 PM

yup.

dhoward 02-25-2010 06:05 PM

I broke down this year and bought the KitchenAid stand mixer I had wanted for years.
It is truly the Chuck Norris of kitchen appliances.

john70t 02-25-2010 06:20 PM

Fork in a drill? Those stand mixers are heavy.

imcarthur 02-25-2010 06:46 PM

Yes, you can with a hand mixer. Done it.

Ian

TSNAPCRACKLEPOP 02-25-2010 06:53 PM

fork it!

rfaust6024 02-25-2010 06:59 PM

A hand mixer works great for a cakes and most home baked goods, HOWEVER.. if you are making ROYAL FROSTING, it takes 7 minutes, yep, count em, seven minutes..then you need a stand mixer, unless you want to hold the hand mixer for SEVEN MINUTES! Maybe a task I could of done years ago after reaching puberty (wink wink nudge nudge get what I mean eh?) but not anymore due to poor arm muscles. But I'm old so a stand mixer is my favorite. Go hit a Target, it's not only where America shops, but me too!

vash 02-25-2010 07:00 PM

ok, thanks. making a cake is a time commitment. i dont want to waste my efforts.

lemon layer cake is up first! DAMN! i need pans!

Tobra 02-25-2010 07:03 PM

hand mixer is fine for almost anything, except for pie crust....hmm, pie.

Dottore 02-25-2010 07:08 PM

Most master-bakers do it by hand.

You're right. A pie crust needs hands.

Ian

TSNAPCRACKLEPOP 02-25-2010 08:25 PM

pie are square, not round..

berettafan 02-26-2010 04:21 AM

hit a yard sale and buy a used one for $25.

i mean, what are you doing for mashed potatoes?

you don't HAVE to buy the kitchenaid brand btw. our sunbeam works great.

Pie crust needs a food processor and frozen butter

imcarthur 02-26-2010 04:49 AM

No. Pie crust needs Tenderflake lard (pity - only in Canada), a pastry cutter, strong hands & a rolling pin.

The big issue I have with a stand mixer is storing the damn thing. That is why I have resisted.

Ian

vwbobd 02-26-2010 04:51 AM

What do you think they did before stand mixers?????? You think there was a line of potential cakebakers waiting in line at the kitchenaid plant pounding thier fists :-D

I bought my wife a KA last xmas and it is awesome....definitly worth the money!

javadog 02-26-2010 04:55 AM

You know, they made pies long before any kind of mixer had been invented. You need a bowl and a spoon, maybe a whisk for some things. There are a couple of other pastry tools for making pastry....or pasta, or....

My mom made the best pie crust in the world and never even saw a food processor.

Mashed potatoes are best done with a ricer or food mill, not something electric that beats them into a stiff glue.

We have gotten way too addicted to electricity. Just sayin'

We just got a KitchenAid refurb stand mixer on the KitchenAid website. 450w higher end model for just about 50% off. Looked at other KA mixers on other sites, 450W models run to $429, we got our for $220 delivered.

cashflyer 02-26-2010 05:05 AM

I don't think mixers were invented until well after cakes were invented, so yes it can be done by hand. Same for just about any other pre-electricity food item.

p911dad 02-26-2010 05:23 AM

Good one!

Dunno... Elaborate on your question.

I'll say this. In general, when mixing things that will be baked, thou shalt combine the ingredients, not beat them into submission like a debutante at an S&M club.

Bad things happen when you over-mix.

Unless you are making something like a pasta dough, in which case the beatings have a purpose.

most master bakers i know have so much work they haven't got enough hands to do it by hand... mixing cake batter is not rocket science, and a machine will always do a better , faster job an getting whatever it is you're mixing, to mix in an optimal way.

And the right machine, with the right kind of extension will do whatever you want it do do... simply mix A with B, or Mix A with B and get air in the mixture, or not...
This is one thing where hands just have advantage over a machine...

IF we were talking about getting some kind of dough, shaped in whatever cosmetic shape, then yes, that's something hands can do better then a machine... but the simple job of mixing... no way.

red-beard 02-26-2010 10:26 AM

Somethings are better beaten by hand ;)

Brownies. 30 strokes only, by hand ;/

svandamme 02-26-2010 10:32 AM

you can get the same mix specs if use the machine right...

The OPs question was, "...everyone uses a standmixer. can i get my with a handmixer?"

The answer is yes.
Yes, you can get by with a hand mixer.
Yes, you can get by with a mechanical mixer.
Yes, you can get by with no mixer and just use your hands and a fork.

I have often heard that said about Belgian masterbakers.

DanielDudley 02-26-2010 02:31 PM

I thought they were waffling. I didn't know they were masterbaking.

It's confusing I know. Most Belgians are masterbakers. Some are also wafflers.

Um,,,,there's a quite large bakery across the street from Pete's. I smelled the aroma for almost 2 hours whilst waiting for you to show up.

Westy 02-26-2010 03:08 PM

Oh, and by the way. I think they call them mashed potatoes for a reason. Hmmmmm,,,never heard them called riced potatoes. Maybe they call it mashed pilaf, too. Just sayin'..........

john70t 02-26-2010 03:25 PM

There's more than one way to stir the batter.

vash 02-26-2010 03:39 PM

i guess i asked the question all effed up. i should have asked, "can i make the same equally delicious cake without a stand mixer?"

thanks for all the replies.

Westy 02-26-2010 07:00 PM

Bobby Flay did a throwdown with that red velvet cake stuff. Search his show on foodnetwork. I don't remember if he won or not......
