YAWNNNN....another cooking thread

A few weeks ago...Eggs Benedict with hash browns and fruit

Hmmm...wife comes home late from work Thursday and didn't get dinner. What's in the fridge?

Cooking wit gas...

Voila...Avacoda, mushroom cooked in white wine sauce, jack cheese and bacon omelette with wheat toast and homemade raspberry jam..

This morning in progress...

French toast glazed in amaretto infused maple syrup, hickory smoked bacon and grapes (just to make it healthy

)

Ahhhh....March 14!!!!! Let's see if I can get this special day jumpstarted.

Lets see....hmmmm....a few eggs, some velveeta (it is the South

), garlic, grits...WHOA!!!! A few petite filets!!!!

Oh yeah...love a filet cooked in a cast iron skillet...

Steak and eggs, garlic cheese grits with smoked paprika thrown in, buttermilk biscuits...Wifey's not gonna know what hit her

Off to serve it and more to her in bed

Nice Dueller, love the cast iron skillet. Does anyone know what's the deal with calphalon? Maybe mine aren't broken in yet, but flipping eggs is a no go without a spatula, they stick. Any suggestions on where to find a nice skillet for one purpose? Balance and weight are also a huge factor. I love fried eggs over easy and it's not happening with what I have.

That pic above of the omelette cooking is on a low end (inexpensive) Calphalon "Essentials" griddle pan...some kinda teflon coating. Also have a small omelette pan in the stuff and its really stick free. It's held up for 10-12 years of frequent use. I have some of the original Calphalon upscale non-coated skillets and unless you use lotsa butter/oil, eggs will stick. I do use them for paneed/blackened dishes to go straight from the cook top to broiler.

The cast iron skillet is one of three I got from my grandmother's kitchen 15 years ago after she died. Can you say "well seasoned?"

I don't think soap has ever touched it...it long ago developed essentially it's own non-stick surface.

I made pancakes for the kid's breakfast today and then tacos for lunch. I wonder if that will work for the special day?

oh wait, we "celebrated" last night!

DST actually worked to my advantage this time.

Pitch the calphalon back in the cabinet for egg cookery. Same with a cast iron skillet. For eggs, buy a teflon coated omelette pan, 8-9 inches in diameter. Don't preheat it to death before cooking, use lot's of butter (or clarified butter) and don't introduce the eggs until the butter is past the sizzling point and just short of the browning stage (here's where clarified butter helps.) Once the eggs are in the pan, don't screw with them for a little bit.

someone deleted a post, lol. Teflon, check. Who makes one that is well balanced? The skillet/pan has to be an extension of myself, saving burns, otherwise it's junk.

Balance? Dude, this ain't a gun with lots of recoil. It's a small pan for cooking eggs. Everybody makes one, they all work fine.

yea, soap is a nono for cast iron, for knives or steels your supposed to stick them in the ground, that omelette looks great, I love 'em. Now you've got me wanting french toast, haven't had that in a long time & I like that pan you used, been wondering about those

Not breakfast, but twins and I trying our hand at greek recipe from their uncles wife. We'll let you know how it comes out.
