been eating more salads lately. the best thing next to a salad..is MEAT!

been trying to get more greens into the system. the local farmer's markets are up and running. i love going to the same booths over and over, and getting fresh produce. i love a simply dressed salad..i love skipping the potatoes, rice, or whatever bread..and simply "garnishing" the salad with MEAT! first meal, a good friend caught a fresh tuna..what i didnt eat raw with wasabi..i seared and served over a spring mix with roasted beets.. beer canned roasted a chicken in my weber kettle grill, tonight. simple lettuce, arugula salad..italian balsamic and olive oil. i feel light. (except for the bottle of wine).

Tonights dinner;

Cedar planked salmon with Dijon brown sugar glaze.

Grilled asparagus with a red wine, balsalmic vinegar brown sugar reduction.

Rice and Caprese salad.

Wow, makes my dinner look pretty pedestrian. Crawfish andouille, sharp cheddar and fresh spinach on a big hunk of fresh Italian bread.
