Feta Chicken
Place chicken breasts in a pan. Drizzle a little olive oil on top of them. Season (I used garlic and seasoning salt). Chop up your vegetables to bite size pieces. You can use any vegetables you want. For the tomatoes use Roma (they have a thicker skin and less seeds). Peppers, celery, onions, zukini ... what ever you have or like. Crumble feta cheeze on top. Bake in a covered dish at 375 for a hour. At 3/4 hr drain off the excess liquid. Bake uncovered for the last 15 min. Enjoy :)

Made it for the guys at work and added a 50 count bag of prawns to the mix.
Uped the tasty factor by a couple points to yummy + :) |
That looks great! Now my salmon stuffed with crab and lobster does not sound as fantastic as it did an hour ago...

love love love feta. had an eggplant sandwich today with some feta/garlic fries on the side for lunch.
