Any Painting Experts out there?

I have had problems with painting the few cars I've painted and not 100% sure why. The spray gun needs a lot of preasure to spray the paint, (over 60 psi) and will spray on and off every few seconds. In other words it will spray for 2 seconds then stop for 2 secaonds all the while holding the trigger down. It makes getting an even coat very difficult. Also, due to the higher preasure, the orange peel is rougher. I thought the gun was plugged so cleaned it and it sprayed water perfectly. Unfortunatly, I can't paint a car with water. I've tried adding more delution but no change. I'm using a 3 1/2 hp compressor w/12 gal tank. Is this tank to small? I have the suction type gun and was thinking of swithching to the gravity fed. Any ideas on this? Thanks.
Bob
