Hot Summer, Cool Recipe....

Man it's been hot... I just wanted something cool and delicious last night so I came up with this recipe.... it was really... really... good!


Remove the skin off of two chicken breast and boil in a pot until done...

Set them aside and debone them once they are cool... (shred the meat by hand)

in your pot add a little more water (if needed) and add 2 cups of elbow macaroni
add a tsp of olive oil, a pinch of salt and a light dusting of garlic powder...

right before your pasta is done throw in a bag of frozen broccoli...

keep boiling until you pasta is done... this should have given your broccoli time to cook but not to become over done...

Once your pasta/broccoli is done drain it completely and put into a large bowl...
add your chicken to the pasta and mix...

place your bowl in the freezer and every ten minutes or so go in there and mix it up.... we are trying to get it completely chilled down....

once this is completely chilled, take it out and add the following....


1/2 cup grated Parmesan cheese
1/2 cup shredded colby jack cheese
1/2 - 3/4 cup of Bleu cheese salad dressing....

mix well and place back in freezer to continue to chill

start making some garlic bread now... by the time it has baked it is time to serve...

I would have probably thrown in some bacon bits into this recipe if I had any on hand at the time, but trust me, even without them this is a great summer recipe!!!!

I was running a little low on broccoli and my daughter got her garlic toast a little overdone, but I am sure it will taste just fine....

my plan is steak - grilled outside (our nice weather went a way and it is hellishly hot here -- over 90 oF)

Man it has been down right miserable here the last month.... high humidity and high temps... with a hurricane and tropical storm thrown in just to add insult to injury....

Man that looks good!

I have been longing for a great cold pasta recipe for a long time. A neighbor made some cold spaghetti with cucumbers, tomatoes, Parmesan cheese and blue cheese dressing. It was excellent!

I tried it and totally fouled it up, ending up throwing it out.

Now I'm gonna try yours!

Although I think a good cheeseburger or Rib eye (w/ salad) satisfies all my necessary food groups, I do have a weakness for spaghetti. (Hot and cold).

Looks tasty! You must be in the southeastern part of Texas b/c this summer has been quite mild if you ask me. I was in Midland/Odessa for the better part of the week where the high was maybe 97, felt like about 85. It was nice to get away from the humidity. We haven't hit 100 yet, where as last year we'd be on day 30-35 of 100 plus. It's a mild one.

I have to agree with Matt. It has been hot, but still the temps are no where near as bad as last Summer. I am thankful for sure!
