Homemade Pad Thai for dinner!

Beth made Pad Thai at home last night and it turned out great! Beth was trying to find the right sauce, but everything has HFCS (high fructose corn syrup) in it, and we're cutting that out of our diet, so she researched and found a recipe on the Internet. I don't know if it was the homemade sauce, fresh ingredients (bean sprouts, rice noodles, cilantro, lemon grass, peanuts, etc...), but it was fantastic! Simply the best Pad Thai we have ever had. Our son and daughter had friends over and we had 7 people eat dinner for $13. Everyone really enjoyed dinner and Dan, or son has a peanut allergy and was able to try the dish for the 1st time with no nuts in his portion. I get to have the leftovers today!!!

Ahh, one of my favorites. It's always better to make your own sauce, as the canned/bottled versions taste like crap. I have a bunch of recipes for this, as the Thai people make it umpteen different ways... what did your wife use?

I'll have to post the link to the recipe she used, it turned out great! All of the commercial sauces were full of HFCS and Beth thought that it would be better to use fresh ingredients, and it certainly was! After 23 1/2 years of marriage, I think that was the very best dish she ever prepared and she's made a lot of good food for our family! We're concentrating on eating healthy and Beth keeps telling me how much cheaper it is to buy the ingredients and make it herself, so that's an additional bonus. We built her "dream kitchen" several years ago and that's her thing, she loves to cook and create new recipes and tweak old recipes. I'm very fortunate to have her!

That's true and if you can find an Asian or Mexican grocery store in your area, I can tell you that the prices are a fraction of what you'd pay in a normal grocery store. Just wash the produce...

Beth used this recipe, but of course she modified it a little...

Pad Thai Recipe - Allrecipes.com

She added chicken stock to keep the rice noodles from drying out and she added fresh lemongrass and cilantro because she knew those two ingredients are in our favorite Pad Thai. I should say our "old" favorite, since her homemade Pad Thai is now everyone's favorite!

Serving 8 people for $13 is a bonus, too!

Use palm sugar instead of white sugar, if you can't get palm sugar use light brown sugar...

Use limes instead of lemons..

Butter? really now..

Recipe sounds close..... one of my exes was Thai She could whip up Pad Thai in a few minutes... watching her cook was amazing..it was an innate skill for her.

Lemon Grass is not traditionally included in Pad Thai... but if you like it, go for it..

also needs Tofu, use firm Tofu and marinate it in soy sauce, or better, Golden Mountain sauce for an hour or so before dicing and stir frying..

Thanks! Looks like there are thousands of ways to make Pad Thai. Must be their "chili"! Anyway, the lemongrass and cilantro give it a really nice, fresh flavor!

Cilantro is part of the trinity for Thai cuisine... used everywhere

Yes there are 1000s if not millions of ways to make Pad Thai.... every family has its own recipe.... My ex could look in the fridge or cupboard and whip up delicious meals with seemingly no ingredients..

I'm lucky that I live within a short drive of some amazing Asian markets... Flushing, NY and Chinatown, NY. Also lots of online sources for authentic ingredients...

I just returned from two weeks in China visiting my wife.. and had some amazing food over there...

I'm hungry now LOL

I lived in Pattaya, Thailand (someone has to do it) back in the 70's for about two years. The Padt Thai (Padt is Thai for fried) was wonderful as was everything else. The street vendors make the best. We don't have any asian markets in this small town so we use Thai Food, Groceries, Cookware and Asian recipes at ImportFood.com.

My wife is living in China while we wait for the immigration process to finish.. She was here on a work permit, and quit the job because she hated it...

As soon as she quit the job her visa/permit was invalid and she instantly was in country illegally...

Getting all the paperwork etc. in order for our marriage and her green card was new to us... so she went home and we wait while the I-130/129 etc. process..

Maybe we didn't do the immigration process as efficiently as we could have... another reason she went home is that she has a son, that she misses.. so my wife and step son are living in Chaoyang, Beijing, and I visit as often as I can.

I have been in China so far 6 weeks out of the past 6 months..

that's it...

Haven't been to Thailand in over 25 years... might be dangerous to go back now LOL

fish sauce is the most disgusting, and delicious ingredient on the planet. i went to a bbq with health nuts..turkey burgers. salted with fish sauce. so delicious!!

you break that bottle in the home, you may as well burn the place down.
