Wild Quail Recipes?

I have 5 California valley quail, dressed and cut in half ready to be cooked in my fridge. I am thinking about just dusting them in flower and browning them with some onions and cooking them in a light gravy until they are tender. I am shy about frying or BBQ because I am worried the breasts will dry out while the rest of the birds stay tough.

What's your favorite quail recipe?

Rubbed with salted butter and then grilled/smoked over Mesquite....
Deep Fried like chicken....
Sorry nothing fancier, it's just the way I love to eat them...

Bill,

How about the legs / wings - don't they remain tough when you deep fry them? I know they'd go over well with the family deep fried. (What doesn't!?).

Hey George,

Those quail are going to cook pretty quick you don't want to over cook them... A simple recipe would be to get you some "Natures seasoning". You can find this in your grocery spice/baking isle... I think it is made my Morton (Morton Salt)... Just take a bowl and add a cup of flour to the bowl... then start adding your natures seasoning to it a little at a time.... mix it up and taste the flour mixture.. if it is not salty enough then add a little more of the natures seasoning until it gets just right... then you can put your birds in a bowl with some milk or buttermilk in it and get them wet... one at a time take them out of the milk and put them into the flour mixture and then into the fryer.... I will be doing a video in the future on this, but it will be very good with the quail... this is also a stellar recipe for fried chicken as well...

I do not have a recipe for you but my ex had one.
Make up some wild rice place the quail on it in a big pan with some bacon on top. Bake for 15 minutes at 350. remove the pan throw out the quail, eat the bacon and rice.

I never could get past just the flour, salt & pepper and lightly frying them. I love them that way. I've eaten them other ways at restaurants, but that simple way of cooking them is still my favorite. My favorite breakfast of all time is fresh quail, fried eggs, biscuits, and milk gravy.

butterfly them. soak them in buttermilk for about an hour. blot them dry, dust them with various spices..rub em with oil. tumeric, paprika, saltpepper..whatever +tiny bit of flour. grill them. move them to indirect heat.

bonus if you had a brick wrapped in foil heating up hot. set birds under brick, flip..eat.
