I don't know what the benefit of a flat 8 would be over a V-8 (in a modern street car). The V-8 would be smaller (more cube shaped than large and flat) which makes it easier to put in a car with all of the other stuff that needs to go in with it.

Low center of mass, especially with the groovy Porsche GT style clutch. Plus it sounds wicked cool.
