RIKA!! Thank You!! (Saving the Swedish Cook II).

I come home from work and find a giant box that has arrived by mail. Funny, I have not ordered anything. Particularly not from abroad. I open the big box and find this:



Attached is a gift letter from our very own Rika! I canīt believe my eyes! So I open it and there it is:



My first Slow Cooker!

I am just amazed, in awe of this kind of generosity. First Red-beard and now Rika. Not far from tears in my eyes. Rika - thank you so very much!!

Now we just need to hook you up with slow cooker recipes.

Pulled pork

Pork shoulder roast
Bottle of barbeque sauce(okay that one might be tough in Sweden) I used KC Masterpiece last time
Juice of a good sized orange

Put in slow cooker until done, fork works well to pull meat off bone. Serve on a roll like a hamburger or sandwich.

I bought my meatballs at Ikea, but you can use any frozen non-Italian meatball.

Swedish Meatballs

1 bag (50-60) frozen meatballs
2 onions chopped and minced
1/2 stick (4 tbsp) butter
1 can beef consomme (10.75 oz)
2 cups beef broth or stock
2 tbsp soy sauce
1 1/2 cups flour
1/2 cup sour cream
2 tbsp chopped dill

Preheat oven to 450. Place frozen meatballs on cookie sheet and bake for 15 minutes. Remove from oven and transfer to crockpot.
Melt butter in skillet and saute onions till translucent (8-10 min). Slowly add flour and whisk into a "roux" until golden brown. Stir in beef consomme and 1 1/2 cups beef broth and bring to a simmer. Pour mixture over meatballs and cook on low 4-6 hours.
To finish, heat 1/2 cup beef broth and add 1/2 cup sour cream and dill. Mix together to temper and stir into meatballs. Let rest for 5 minutes. Serve by themselves or over noodles, rice or spaetzle.
