the shop that did the work inadvertently set it to "NASCAR setting."

What machine are they doing the alignment on? Just because there is no adjustment for something doesn't mean it is not right.

Certainly not Hawk Eye from Hunter, but will take note when the truck goes back into the shop.

Although that is sort of funny because a circle track car will turn left on its own, they do have caster or you couldn't hold it straight when you needed to.
