LF a good carving knife

While wrestling with a 1/2 chicken last night to cut it into 2 pieces for BBQing, I suddenly thought to myself "I'm too old for this B.S.!"

What is a good knife for cutting up meat? Is a carving knife what I need? I'm usually cutting up chicken or ribs etc.. Both raw and cooked.

Something I can hide from my wife so it doesn't get abused.

Budget around $100?

I am interested in a knife like this as well as a fillet knife.

Better than good yet not a collectors piece. Can be resharpened many times yet holds an edge well relative to work it's performing.

A brand name would be helpful.

Cutting up a chicken is easy. It’s more about knowing where to cut it than what you use.

I use an 8 inch chefs knife. Before that, I used a Chinese cleaver, until I busted it. I also keep pair of kitchen shears around, when I want to cut out the back bone.

Literally anything decent will do it, you don’t have to spend $100 to cut up a chicken.

Bob, I have a Rapala fillet knife that has yet to need sharpening after 12 years. I have two actually, my wife uses my first one for veggies and such until I did the 18* angle on all her pairing knives.

As far as one for chicken, I just use our old butcher knife, but like Java said, it is where and how mor than the what.

I have a very good sharpener. My crappy knives just don't hold the edge, and I like to spend money.

Rod, if you buy that set, just keep it away from your wife. I've given up on trying to stop Cindy from cutting on top of a ceramic plate & to always use a cutting board. Nothing dulls a knife faster that cutting when using a plate. I gave up, bought her an electric sharpener with diamond wheels..it works "sorta" okay for what she does.

I bought this in Toledo Spain on a recent vacation. My chicken cutting knife. I think you can buy online. Fantastic tool made with Damascus steel that stays sharp. Not cheap but worth it. You can buy equally high quality Japanese blades. If you want to buy American, everything made by Cutco is awesome.

My wife will at least ask me to use the steel when she gets a knife out because she knows it is required to maintain an edge.

I never thought about the ceramic plate.

She tosses them all in the S.S. sink to wash.
