rule # 1 - crack the shell on a flat surface, not an edge.

If you crack on an edge, you tend to get a lot more little pieces of shell that tend to find their way into the egg. If you crack on a flat surface, the shell tends to just have one large crack, rather than a bunch of little cracks.

I was watching a cooking show last week, and seemingly the French way to separate an egg is to crack the whole egg into a bowl, and just scoop the yolk out with your hand.

I use the shell halves myself.

i dump them all in a bowl and scoop out the yolks with a spoon.

It is a clever sort of Rube Goldberg solution to an easy problem

The method in the vid... you have three dirty dishes..

If I need to separate yolks and whites...

Crack the egg on the work bowl, separate by straining between my fingers or the shells

dump the white or yolk into the mixing bowl.. etc..

wash hands...

two less dishes to wash
