Best oil for tempura vegetables ?

Any idea on the best oil to fry tempura vegetables.
I have used rice bran oil and peanut oil before with ok results.
It needs a high smoking point (needs to be very hot)

Any advice from the cooks ?

As I have the peanut oil in stock, I will give it another go.
Need to have it a bit hotter this time
Will try the canola next time.
Time to make up a nice chilli sauce.

FWIW....here's what I found online in regards to your question:

Getting the oil right

Use vegetable oil for frying tempura — corn, canola, safflower or peanut, but not olive oil. Sesame oil is highly fragrant and adding a couple of tablespoons or more can add its perfume to your tempura. You can reuse the oil a couple of times. Just be sure to scoop out the bits of cooked batter that have fallen to the bottom. These are called tenkasu in Japanese, and they can be used as toppings for noodles.

I'm using Rice Bran alot these days.

This makes a really nice chili sauce that goes well with seafood.

2 brown onions, peeled and roughly chopped
8 red chillies
Belacan, thumb size piece
½ tbsp vinegar
6 tbsp oil
1 tbsp tomato paste
400ml tomato puree
4 tbsp light soy sauce
½ tsp salt
4 tbsp sugar
¼ tsp corn or potato starch, mixed in ½ cup of water

Blend onions and chillies in a food processor for 30 seconds.
Heat oil in a wok and add onion and chilli paste.
Add belacan and continue to cook until most of the liquid from the onions evaporates.
Add vinegar, tomato puree, tomato paste, sugar and salt.
Add tomato sauce, starch and light soy sauce.

Good advice.

Jeff, you can't beat rice bran oil for fish and chips.
Seems to be nice and dry(not greasy).

Chilli sauce is done.
6 spring onions trimmed and cut into thin strips
5 cm piece of ginger cut into thin strips
1 large red chilli finely cliced
½ cup light soy sauce
1 teaspoon sesame oil
1 tablespoon brown sugar 2 tablespoons

To make the dipping sauce, combine all ingredients except peanut oil in a heatproof bowl. Heat peanut oil in a small heavy-based pan until surface seems to shimmer slightly, then carefully pour into bowl to release flavours.

Looking good so far.

Agree, and it doesn't change the flavour of the food your frying. That looks like a nice dipping sauce Vas.

Bloody good !
I got it from Kylie Kwong

A French woman I met in Lakes Entrance won the best Fish and chips in Victoria.
She only uses rice bran oil.
Next time you go to LE stop off and get some fish and chips from her.
They are awesome.

Last time I was at LE, I flew in from Sale with a mate doing his check flight. We grabbed a milkshake and flew out

If I find myself down that way I'll look for her.

Stinking hot for the last couple of weeks (supposed to be 45 today)- I don't think we've been below 40 since before Chrissy. I understand that you've been getting some of our weather earlier this week. I'd be nice on the beach down there (don't rub it in too much ).

After a bit more reading, it looks like a dash of sesame oil is the go.
A non roasted sesame oil seems the popular choice for the job at hand.

Veg is all cut.

Well, it has been up in the high 30s and low 40s.
Here on the beach is cooler with the light wind.
Some of the girls down here for summer this year are the best ever.

20 something years ago, Sale was one of Vics top ten country courses.

Maffra had some of the deepest bunkers I'd ever seen.

It's been a long time between drinks. Sounds like much has changed over the years.

hmm, gotta try rice bran oil one of these days...never heard it before.

I have used grapeseed oil with good results, but it was deep frying other stuff and not tempura.
