BTW You have beautiful hands, and nice taste in wine! Really should use uncured bacon, though.

Pancetta is correct, but I prefer to use trader joes Applewood smoked bacon

Ah yes, a world class did din.



You would have enjoyed my Italian holiday. It was an Italian tour of fettuccine carbonara. Fairly much every evening in my month traveling around Italy I had fettuccine carbonara. They were all different, but similarly excellent.
