How do you avoid stunted pea soup....
Do you have any idea other than using a blender to get pea soup smooth?
Last night I put the dried green peas in cold water and started cooking them early this morning in the slow cooker. After over 6 hours on high heat the peas are still crunchy. I am assuming that restaurants(the better ones anyway) blend their peas with a blender because their pea soup is smooth? Any ideas? |
It takes me like an hour or so to make pea soup from scratch. A left over ham bone or pork shoulder bone, some of the left over pork, a couple of bags of dried peas, a bay leaf or two, and salt to taste. Bring to a boil in a big pot on the stove top, let it boil for an hour, stir frequently.

6 hours may not be enough time. They will soften, but never go to liquid. You need a masher or a blender. There days we use a hand held blender that goes in the pot.

Typically I use a pressure cooker anyway...
I cook the ham in the pressure cooker first, take out the ham, put in the peas, cook again, add broth to taste, then cut up ham and put it back into the pot and re-warm. |

Andersen's s pea soup is dog food compared to what I make. I let them soak starting when I leave for work in the morning and then boil them for an hour or so when I get home, toss in ham, carrots, a little celery, bay leaf, and a touch of sherry, salt and pepper to taste.

another vote for immersion blender. Great tool.

My wife lets them soak overnight and then cooks them in a crockpot with a ham shoulder, salt, pepper, etc. for the day. It's comes out smooth and creamy.

Try real peas. By that I mean not dried.

I use a hand blender for making pea soup and any potato based (clam chowder, leek, ect) soups. Makes them all smooth.

I avoid it by never cooking or eating it. I have never been a fan of pea soup. Good Luck.

When I go to a new place/city I often look for pea soup. I was in Palm Springs and found a restaurant that had yellow pea soup. I think that it was called Kaiser's restaurant. Just excellent pea soup. In Edmonton here I used to go to a crepe restaurant and they had the most excellent pea soup. A year ago I went back for the pea soup. It was not on the menu. I asked how come. The waiter said the chef left and took his recipe with him......:eek::eek: Fresh bread, pea soup and a glass of red wine. That to me is close to food heaven.

Make sure the dried peas are not old. i know it sounds counter-intuitive, but if they are too old as in sitting on a grocery shelf for a year, they will never get that creamy goodness you crave. Check the dates on the bags carefully.

Isn't the manufacture or distribution of pea soup banned under the terms of the Convention on the Prohibition of the Development, Production, Stockpiling and Use of Chemical Weapons and on their Destruction?

I once told my mother that I would rather lick a dirty diaper than eat a serving of peas. She thought I was joking or using hyperbole. I don't ususally pick them out of something like a pot pie though. Straight peas. Nope. I don't think the magic berry tablets would make them palatable. Its like green rabbit crap but softer.
