Can I come over? I'm stuck with 1 vegetarian and 3 others who don't like red meat. Haven't had a steak in months!

Very consistent temperatures just above freezing. Wrapped in cheesecloth to absorb the moisture.
Some say domestic refrigerators fluctuate in temperature too much for this but it is debatable.

I ate seitan for a year. if I never eat it again, i'll be ok with that.

(in all seriousness, it's not that bad. I used to make my own...which was much better than the store bought stuff)

I am not a vegetarian, but wanted to try it just out of curiousness. I made roast beef flavored with beef bouillon and onion powder, chicken breast flavored with chicken bouillon and liquid smoke and I made bologna flavored with onion powder, garlic powder, sugar, liquid smoke and a couple drops of red food coloring. The bologna batch turned out spot on. You could not tell that you were not eating store bought bologna. I don't think that I could live off that stuff though... Through with hijack!
