best wood duck i've ever cooked

Shot a couple this past weekend and my son and I had them for lunch yesterday.

**** simple recipe. brine overnight, Ziploc bag with olive oil, garlic and Chicago steak seasoning for about 45 minutes while they get up to room temp, 4-5 minutes on each side in a cast iron pan with pat or two of butter in the bottom instead of oil.

Best I've cooked for myself. Loved 'em.

anything much past medium is just not good.

Well I got one of those too.

Apparently the guys I hunt with have a 'trophy' wood merganser decoy. Its a bit of a gag award.

It's currently in the home of a guy that shot two mergansers a few years ago.

I'm told based on what happened Saturday I can expect to have this 'prize' in my home indefinitely.

IMHO. The wood duck is the coolest looking duck. They are not common where we used to go. One flew by and I just stared. Very cool looking bird.

I have a friend with a section of property that has lots of them.

Supposed to be best eating duck in our flyway. Indeed very beautiful to see. Even better to hear their unusual squeal as you're sitting quietly in the dark 10 minutes before legal.
