Butter - I found the real thing
When I was a kid on the farm we had a 500 gallon tank that held the milk from the cows. When the cooling unit came on a paddle in the tank would stir the milk to bring it in contact with the cold sides of the tank. One night the cooling unit came on - but it wasn't cooling. The paddle turned all night, and when we opened the tank the next morning there were big balls of butter floating in the tank. This was the richest, most amazing tasting butter ever. I've spent 50 years trying to find butter like this.

Where can you buy it? Looked on their site. Can't see how to get it, either in local stores or shipped to you.
Since I snack on butter, I have to try some.

When I was a really young kid, my mother would make butter like that. We had a cow that got milked daily. My mother/parents would let the milk set until the cream came to the top. My mother would spoon it off into a Mason jar, put wax paper over the mouth of the jar, screw the lid down, and set in a chair rocking the jar back & forth. After a while lumps of butter would nucleate in the cream and float to the top if she stopped rocking it back & forth. She'd spoon them out into a saucer, mash them together, and drain the excess cream back into the Mason jar. I don't remember what it tasted like though.

cool, thanks, early Christmas present for me. interested to see what it will do in a beurre blanc as well as on toasted croissants w/w/o honey.

You can make it yourself quite easily. Heavy cream whipped until it separates will form butter chunks. Wash off the watery stuff and add salt to taste.
My at the time gf and I went to a Civil War days event and they were making butter on the premises. Even got to try our hand at churning. The lady demonstrating shared the above process. Still do it on occasion but mostly for the wow factor.

Even simpler. Take a small carton of heavy cream. Shake it until it stops making a sound, just a few minutes and you've made butter!

I received a PDF from Troyers today of stores in MI that carry some of their items. It doesn't appear that they do much with big retailers like Meijer. There is a store in Frankenmuth listed so I'm going to head up there today and see if they have it.

There's a strong Amish/Mennonite community in Sarasota FL where I grew up. Troyer (and Yoder) was a very common last name there. My folks still live there, so I will have them see if they can find it in one of the Amish grocery stores.

I'll check a few stores around here.
In general, our butter selections have been improving along with our milk and egg selections. I've gotten used to the taste of the better things, and it helps in losing weight and getting in shape too. The body machine likes good quality fuel to run on.

Cool, I think we are going to try ordering some of the butter.
Hopefully, this post will be a nice tangent and not so much of a hijack. Per chef Sean Brock from the "Mind of a Chef" series, this place makes really good bacon and ham, the old fashioned way. I'm dying to try some of their bacon, and would love to try their ham too. |
I tried that a couple of years ago. Trying to teach the grandsons that food doesn't magically appear in restaurants and supermarkets, it's actually made by someone. We made butter, but it was pale and just didn't have the right taste. I suspect homogenization had something to do with it.
