what are you cooking this holiday?

Christmas EVE. i thought we were going out to eat. us picking up the tab. no dishes, no hanger-ons after the food is done.

wife torpedoed that idea last night. she wants to invite a family over that got burned out in the wildfires. apparently there is a family dispute over there that resulted in not being invited to dinner.

i had my butcher cut me a big 3-bone standing rib roast. some Jus, mash potatoes, some oven roasted veggie (brussel sprouts or asparagus). i'll round out the meal with some Eclairs for dessert.

and like the George Thourogood song..some whisky, wine and beer.

Christmas goose is the plan. That should yield enough goose fat for a year's use in various ways. i think this is the third time we've had goose.

Kind of a dumb tradition started 5 years ago, the year before my grandson died. I had just gotten back from Mexico with a dumb $2 tourist tortilla smasher. Just for a hoot I bought a bag of massa flour and the three of us made tortillas together and had a great time - way more fun than the traditional dinner that was on the menu. The boys came up with the most god-awful taco fillings. The ice cream one was actually pretty good. Long story short, every year since, Brodin's two brothers come over on Christmas Eve and we get out the tortilla press and make tortillas for Brody.

Friday, my daughter will be joining us, we'll have a 3 bone rib roast, red wine (TBD), sweet potato and a veg. Ditto the comment on whisky! Christmas, will be red beans and rice, biscuits and beer...nothing better. Next week, my son arrives and we'll have mac and cheese....NY eve, probably a turkey with the works.

Hallacas and pan de jamon for Christmas Eve. (I'm buying the hallacas, as we don't have a whole afternoon free to make our own; my mom made the pan de jamon). Probably something avocado-having to go with it.

Special quesadillas and carne asada for Christmas eve and for Christmas day standing rib roast and turkey and assorted fixing. Going to try a real white sangria as well. The red is always good but we have some rum from when my wife made some rum cookies so giving a white one a try.

i am smoking brisket sunday night for Monday. man I hope it comes out OK.
then my brother has picked up aged prime rib like above.
last one he did was by far the best piece of meat I have ever had.
that is for Tuesday.

Daughter and her boyfriend, inlaws, and my son, and his girl friend will be here at noon on Christmas Day for Prime rib, sweet potatoes, asparagus, croissants, wine/beer, and a cheesecake for dessert. My wife makes a killer prime rib with aus jois sauce.

Ok, here you go....my rib roast tonight. My method, season, cook 6 min/lb at 500 degrees F (note, I live at 9K ft), turn off oven, let sit in hot oven for 2 hours, remove, rest 15 min, carve, serve.

How do you prepare??

That looks awesome. Not sure I should try the closed oven method.

I usually just roast it. 450 then drop the temp to 350 and go until my probe says 123
Let it rest 20-30 mins.

Ham with macaroni and cheese with frozen corn cut off the cob (this past summer) for Christmas eve, and prime rib with roasted little red potatoes and fresh green beans for Christmas day. I do my prime rib as Erakad does, adjusted for altitude. I foresee a lot of leftovers in my future.

Kind of traditional for this part of the world:

Christmas Eve: I made 1 gal. of my award winning chili last night for serving tomorrow (much better if it sits overnight). Will also have homemade tamales, homemade cheese enchiladas, queso, chips, and charro beans all served with flour tortillas on the side with plenty of salsa.

Christmas day: the traditional turkey, cornbread dressing with gravy, mashed potatos, sweet potato casserole, rolls, etc. with your choice of pecan pie or apple cake for desert.

We are dumping the family and getting the heck out of town...
Presuming nothing will be open Christmas day so we will be ad libbing whatever we can throw together with the hotel fridge/micro and take it down to the beach (booked a room in Encititas).
