Copper Collection
I have been collecting Copper cookware for quite awhile now. The first pieces that I bought were the 3 All Clad Copper in 8 Qt, 3 Qt and 2 Qt sauce pans with lids back in the late 90's at a tony Cookware shop on Lake Blvd in Pasadena on sale for $300. The next ones were the 3 Bourgeat pans (SS interiors) a 10 inch French fry, a 4 Qt & 2.75 QT Flared Saute wt Lids from an estate auction in Wyoming for $100.00.
The rest have been acquired over time by dumpster diving at Thrift stores here in town. They include a Revere Signature 1801 Crepe Pan, a 10 inch Magic Copper Chef triply wt Stainless interior (a precursor to All Clad Copper pans), A "Made in France" 10 inch fry pan tin interior probably Mauviel, a 1 Qt Sauce tinned pan "made in France" for "Crate & Barrel" probably by Mauviel. An unmarked 3.5 Qt triply wt SS Copper Casserole and because it is not marked "made in" is probably made in the US by? A 3.5 Qt Sauce hand hammered tinned sauce pan marked "made in France" for "Crate & Barrel" probably by Bourgeat (it weighs 5.5 lbs). Not shown is a 10 inch Au Graitian Tinned interior pan that is marked "made in France" and is probably Mauviel and a Dehellerin 14 inch tinned Au Graitian that needs retinning. None of the Thrift store pans cost over $10. Some of them have needed quite a bit of elbow grease to shine.. Last night I steamed some Broccoli, while I made a Cheddar Cheese sauce with some cream, milk, butter, a bit of flour and a dash of nutmeg...in the little 1 Qt sauce pan...Heat on low bring it to just below boil, mix in ingredients while stirring and before you know it voila cheese sauce over Broccoli..

So far Bourgeat pans are the snot as afar as quality goes..
But here is another Copper cookware company that would be on my list to get one of. Copper pots are great. I have a ton, mostly bought in France and shipped home. Most is the Mauviel 3 mm stainless lined stuff with cast iron handles. Heavy, which is the main drawback. I have a few that are tin lined, don't like those too much. I'll post a pic later.
For polishing, get some "Twinkle" copper polishing paste. You just run hot water on the pot, sponge on the Twinkle, then rinse it off and dry. No scrubbing or rubbing, well maybe the first time you're shining up a copper pot that is dull brown, but if you get in the habit of applying Twinkle after every few uses, it only takes 30 sec. Some hardware stores have it. |
