What are BBQ rib tips?

My wife just emailed me "co-worker brought in BBQ for lunch (she know the owners of the restaurant so she gets it for free) for the whole office, the brisket is sooooo good. Want me to pick up BBQ for dinner Saturday?" she asks me what I want and attaches a picture of the menu.

My goto at any BBQ place is baby back ribs... I notice something on the menu called rib tips. What exactly is that? (other than the tip of the ribs)

I was going to sing the praises of pressure cooking your ribs first, and then carmelizing them under the broiler, but then I realized you weren't asking for how-to tips. But still . . .

You'd think, right? But honestly, they are the best ribs I've ever made. So tender and flavourful. Broiling them is essential, though. You won't carmelize anything in a pressure cooker.

Plus the pressure seems to drive the flavours of the rub all the way through the meat.

bbq rib tips is what chain restaurants push to squeeze a couple extra dollars out of scraps from good cuts of meat.

it's the food version of putting less detergent in the bottle but charging you the same.

around here, riblets are the last inch or so of the small end of each rib with the meat.

Been doing them that way for years now. So much easier and faster and taste the same as outside grilling.
Why waste a half day or more waiting on them..when you can do them in a half hour or so?
