Tonights cooking adventure...filets...

Here's what is being cooked.





The Plan is to pre-heat the oven to 450* with the cast iron fry pan inside to warm it up.
Once oven is up to temp, remove pan and put on stove top burner to continue heating to 'rocket hot', or until the oil smoke starts coming off it, which ever comes first.
Then, sear one side each of the filets for 2 min's max, flip, sear other sides for 1 min, then remove pan from stove top and place in oven for 6-7 min's max.
Remove from oven and pan, tent on plate with alum foil for 6-7 min's before serving.

TIA. It's a learning process when you don't get to cook steak a lot.

Use butter instead of oil.

Maybe consider the oven first on a broiler pan then the rocket hot sear. Slightly less smoke in the house that way. Someone will chime in about the temp and time.

How about a pre-heated ribbed cast iron pan instead of the broiler pan?
Put it in the oven when first turning it on so it heats up, then just plop the filets on it.

I'm not a fan of the "rocket hot" pan temp. You only need 300 to get browning. Add a bunch of heat and you're just increasing the thickness of the "too done" part on the outside.

Whatever you do, I'd put it in the oven as soon as you flip it.

If you planned ahead, you'll have some asparagus, crab meat and a Bearnaise sauce to put on top of these before eating them.

Filet is a great sauce delivery vehicle. Reduce half a bottle of Bordeaux, add in some demi glace and you'll be all set for a great steak. Roasted red bliss on the side.

Like grillin cuts like that on my propane smoker roast grill. Put apple chips in the smoker bin for a mild smokey flavor and set the grill on high until it starts smokin. Put the steaks on and turn the grill down to medium. After 5 minutes rotate the steak 90° for fancy criss cross grill marks. Flip at 10 and rotate again in 5.

Like skin on salmon filets with cherry wood chips grilled for 10 minutes on high and smokin.

Thanks again guys, it turned out fine and tasted really good. Nice and tender, had some shrimp also fresh corn on the cob.

Get yourself some decent steak knife or at least use your pocket knife next time, sawing through a piece of meat like that is BLASPHEMY!

Yep, our favorite. In close second is our favorite restaurant's filet with their crab au gratin on top.

Some of us were hoping that wasn't ketchup...

When my kids were young, they would put ketchup or barbecue sauce on pretty much any steaks I cooked. Baby Jesus cried.

Yeah, it was ketchup.

JK.

Sauce for the shrimp, which weren't bad either.
Surf 'n Turf is what they call it in the restaurants.

No, it isn't corn ON the cob, but it is corn freshly OFF the cob.

And as far as the steak knife goes, when you know how to handle the instrument there's no sawing action involved. It was a tasty dinner, even if I had to cook most of it myself.

My room mate in college's dad was a Heinz rep. Room mate put ketchup on everything. Not just more things than most, EVERYTHING. Even stuff like fruit, spaghetti, pizza, sandwiches, chips, etc. Don't remember him ever eating anything without ketchup. He used copious amounts of the condiment. When his parents came to visit they brought cases of the stuff for him.
