Paint removal

What is the best way to remove the paint on a 1960 Roadster?
Repainted once in the early 1980's.
I have been told the paint remover will leave a residue, which will cause problems in the future.

Will the lead on the body panels retain residual stripper, which will eventually bleed through the finished paint?

no you would be sanding the panels including the leaded areas after you wash and neutralize the paint stripper.
