Glaze is a mineral oil product that when applied to paint gives it a deeper "wetter" look. It does a mild compound and cleaning.

Polish is a vague term in car care.
It could be an abrasive compound that "sands" the paint job, this is usually called compounding, in preparation for a protectant like carnauba wax, or other petroleum protectant. Or it can mean a cleaner, protectant. Or it can be wax, glaze, etc. protectant.
