Take down to metal or no?

Currently my 79 targa is in the body shop and, I have two options as far as prep goes.

1. strip EVERYTHING off (inclusive of the factory original paint, etc. down to the metal and start from there.
2. strip most of everything off - however, leaving a considerable amount of factory primer and such on due to the fact that it's pretty darn good quality and is rather more difficult to take off.

My guy anticipates that taking off all the factory paint, primer, etc. would result in another 20 hours or so. The factory primer/paint is in good shape as he's gone through several layers of repaints at this point.

Look forward to everyone's thoughts.

with out seeing the finish and it's condition it's hard to say what would be best for your car ?
the OE finished and undercoats are of good quality so if you could leave them alone it's best .
how ever if there is any blistering , puck marks or so on coming up thru the OE undercoats then stripping to bare is best .
