Painting (basic 101) for a novice !!

All,
I am going to have my 1967-912 painted in it's original color of Aga Blue-that being said it had a previous respray albeit a very shoddy job-no glass out, panels not removed, etc...Let's keep this simple, What questions should I ask about the paint and their process?Does it need to be baked or is that something else all togetherWhat type of paint/ finish should I insist on the restoration shop using.

I can say this you get whatvyou pay for,if you want it done right glass out,fenders off ,doors off deck lid off,and hood,all interior removed ,media blasted etch primed,body worked refitt everything that was removed,take everything back off ,prime it wet sand,maybe reprime depending,wet sand again,color single stage?or bace coat clear coat,wet sand polish...pretty basic.Just dont forget your check book haha
