Front wheel bearing replacement

I have a bad front bearing on my 1960 356, T5B. I've ordered the new bearings and Im planning to replace the bearings in my home garage. What is the best way to remove the old raceways of the inner and outer bearings? I'm think it may be better to take the hubs to a garage where they have an arbor press to remove them and replace the new bearings races and the seals.

How tight should the nut be tightened agains the flat washer that is next to the outer bearing?
