I believe that is the temp switch for the fender oil cooler fan

That was my first thought. Would explain why the fan never comes on (though my car runs cool without it).

Any downside to making it a manual switch?

Unless it changed from 88 to 89, the temp switch for the front fender oil cooler fan is located on the top of the oil cooler itself....

The replacement part on Pelican does not look anything like what I have (pictured above)

Looking at the PET, that appears to be a temperature switch, but it's not the one that activates the front fan. Check out part 93060611800.

This sensor controls the engine compartment electric heater fan. It pushes additional air through the heat exchangers which is dumped under the car. The sensor is the same one that is mounted on top of the front oil cooler with a fan, 87-89..

Confirmed by my factory service manual.
