Can I run my Carrera with the seats out?
This is probably a silly question, but I wanted to make sure. On both my older M3 and an older Audi I had I started them with the seats out and it set a dash light that I had to have reset by the dealer. My 85 Carrera doesn't have air bags, but I had to ask. I have the seats out being re-upholstered and it's been sitting for weeks - I want to back it out of the garage and run the engine for a while.

With a G body 911 you can easily start the car and let it idle while standing outside of the car. Key on the left, easy access, start and it idles.
They were designed in an era when the engineers all just assumed the buyers were intelligent enough to figure out to be 100% sure it is not in gear, and the parking brake is set. I start mine like that on occasion. No brake pedal interlock, just the owner's common sense. Of course the world is full of idiots and all cars require one to be seated, and press the brake pedal with the car in neutral or park to start because so many idiots started a car when it was gear and had a crash. Just be 100% certain the transmission is in neutral, and the parking brake is set.

Why run the engine without driving it? Not sure it will do the engine any good. I’d just wait until you can take it out for a drive so it gets up to temperature

Sometimes I pull in the garage and get out and then think, I should check the oil level now since the engine is full temp. I start it right back up, and go pull the dip stick and add oil as needed. No need to get back in to start it.

An old wine crate is required to avoid triggering a MIL. Gewurtztraminer is ideal.

Nope. That is the first I head of that. Pure dumb ass move to do that with a $500 dune buggy much less a mega million dollar 917.

I just ran my '88 with a milk crate in place of the driver's seat today to back it out of a garage while the seat was being worked on by an upholstery shop. No issues.
The DME is under the driver's seat - try to avoid doing anything that might break that.
