Does the oil gauge read 0 when going over 90 on all Porsches? Just the early ones? any particular reason why or is it an unknown reason?

Do a search on "oil gauge" or "check oil level". Briefly, the oil gauge measures oil in the tank which fluctuates as the car is operated - higher when the car has been idling, lower when the car is revving hard.
