WHAT SEALS, GASKETS, ETC. SHOULD I REPLACE DURING MY ENGINE MY ENGINE CONVERSION ?

Sent you an email, but to answer your question, I say change all the seals, gaskets, and o-rings you can reach. Better to change them now and avoid a potential leak than to install it in the car and find you have some leaks you can't reach without redropping the motor.
