Could fairly fresh oil change account for low pressure?

Not really unless you drained the oil and didn't replace it. :)

BTW, your oil pressure sounds fine.

My '76 2.7 had the same behavior even with the 11-blade fan upgrade and three to ones replacing the thermal reactors. Solutions: Pull, clean and reseal the engine (short of pulling the heads or the oil return tubes). Pull and clean the engine mounted oil cooler. Clean the outside of the oil tank.
Install external oil thermostat (bought used), OEM factory lines (purchased one new and the other a used line I repaired) and trombone oil cooler (which one can get for almost nothing). Install SSI's. Now it's really hard to get above 215F (20W50 dino oil)while highway cruising even with the A/C on and 100F+ outside air temp. Will reach 230F sitting still with the A/C on a 100F day. I did some pocking around the motor the top is pretty clean, but when I looked at the outside of the oil tank, man did she need cleaned!!! the side near the quarter panel was all "gunkt" up. your oil pressure being 20 psi when the pil temperature is pushing 240 is quite normal. pressure and temperature are inversely proportional relationships..expect high pressures when the oil temp is cold..lower pressures when hot. your oil pressure is right in line for that temp.

I believe removing the condenser (I'll assume it is the under decklid grille model) will definitely give you better airflow. And, check to see if you have ingested any debris such as old leaves, etc, in the fan. You need a clean airflow path over the cylinders. I periodically squirt simple green up over the cylinders and down into the fan, let it sit for awhile, and wash it out with a hose or the pressure washer. Old caked on il and dirt doesn't conduct heat very well.

mine always wanted ro run hot til i put a front oil cooler in last spring, then viola 180 on the highway no matter what the outside air temperature or how fast.
cost about 1100 but worth the piece of mind.

my experiences were similar to Jim's unless I was doing the Rockys or above 75mph thru 110deg deserts and like gary above the front cooler "worth the piece of mind" +.
