well, i'm 6'2" and 240...surely there are people (even fat chicks?) a lot bigger than me who manage. i will say this..my seats are the original standard seats. i have sheepskins over them, as i need to reupholster as soon as i have an extra grand laying around for new leather. but my seats have lost so much of the original foam in the seat, that you may be right..when i get new foam put in them, i may lose what little headroom i have.
