Volume air flow sensor/ engine shut off

I am trying to test my Air Flow Sensor. I have removed it from the car to test resistance as the vane is moved through the range of motion. All static tests were fine. I am finding that the resistance is not linear, it bounces all over the place going up and down throughout the range. My engine has been stalling at 3000 rpm under acceleration (load) but not at rest when reving the engine at 3000 rpm. I have replaced fuel pump, dme relay, fuel filter, spark plugs, distributer cap and rotor, temp sensor, crankshaft speed and reference sensors (the wire insulation cracked when I touched them) and tested every other sensor in the fuel injection system, the fuel damper and pressure regulators were also tested and were fine. Any help would be Greatly Appreciated.
Thanks, Jagoo

Also, I noted that the inside of the sensor was coated with a film of dirty oil. I have owned the car only a year and a half (most of which time I have been working on it, not driving it) and it has 136k mi on it. (1986 911 cabriolet)

I had a similar issue that turned out to be a bad plug. Check the quality of all your electrical connections. Also, there have been stories of poor solder joints within the DME itself that can cause strange problems.
