Finally some pics.... I need help with next steps

I'm still a newbie, probably a 2 - 3 mechanic according to Wayne's scale in 101 Projects.
Car is 77 911S targa, 2.7, trombone cooler. I've had this car about a year, bought from dad when he got a boxster. Car is a weekender only, runs too hot 220 - 230. I live in Georgia so don't need the heat and have never used the air conditioning.
What I've done so far:
1 New sump cover from Mainely's
2 Replaced valve gaskets with silicone one's from Pelican
3 New fuel pump
4 Removed and cleaned 30 years of junk from heat exchangers(never again!)
5 Put in Swepco trans fluid

OK guys......let me have it
Yes, that's a 5 blade fan. How difficult to replace with an 11 blade?

Yes, those are thermal reactors. If I remove them, how do I hook up the heat exchangers?

Dad recovered drivers seat in vinyl and did nothing to passenger seat. Leather is too much. I've seen some kits on ebay from Inland Imports for $230.00 and World Upholstery for around $600.00. Both say German Vinyl. Anyone with experience with these guys?
Got this Lloyd's mat from Pelican the other day......fits great!

Exterior is in good shape......would like to get a right side mirror to match. Anyone know where I can find one?
