Their are many places to start,
Does your car have a front fender oil cooler?
If not some 911s just run hotter and need to have one
Fanbelt slipping?Do you have the upgraded fan?

I took my alternator/fan off the shroud and cleaned and inspected the top of the heads While in there I also checked the air channels in the shroud for any blocking(I had some grease in mine)I also ran a garden hose thru the channels and watched for free flowing water thru the engine oil cooler out the bottom
Any pinched oil lines ?It takes a severe pinch to restrict flow ,
I even had one , obviously from a idiot jacking the car in the wrong spot ,it was flattened a bit but not enough to cause a problem.

When the car is hot is the cooler getting
hot also. If the cooler is not hot then the
thermostat is not opening to circulate the
oil to the cooler.
