Seat recover project

Guys.....I'm going to recover my seats and am looking at going either leather or German Vinyl. I have a few questions.

1. I found a guy that has my seat covers in leather. However, the seating surfaces are the only leather on the seats. The back of the seat and sides are matching vinyl. He claims the factory seats for my car came this same way. Is this correct?

2. Can this be done myself, or do I need to have it professionally done?

That would be correct in my opinion, not entirely sure about the sides, but the back of my '86 recaro seats are vinyl...
