power out of a 2.8 RS?

with 40 Webers, "S" cams, headers.

Just looking for ball parks...

10 to 1 compression? if so, race gas in your future on single plug
about 225-235 hp

the 306 hp of the full on race engines have radical cams, 2.8 RSR heads, mfi

Go with 2.7 or 2.8?

Anything above 200 hp would be satisfying.

I think the 2.7s ps and cs are about half the cost of 2.8, in Mahle anyway. You pretty much have to twin plug with the 2.8s as well, they are designed for the larger RSR combustion chamber.

For a little while, anyway. With sticky tires, etc, I suspect you'll soon be left wanting more... Just give in and do the 3.6
