If I saw a 911 where the A/C had been pulled and the owner says it had extensive work done by PO but no docs on the work or the reason why.
Do people take out the a/c for reasons other than to drop a little weight as there's a common appreciation that the a/c's in these things bleed too much freon and are just an all arround pain to maintain. On this line as well, if I purchased a car wiothout an a/c and for some reason wanted to consider re-installing one, what would I be talking about in terms of cost and effort (shop and DIY)? While some on here will tell you their stock AC system works great, the majority will tell you the stock system doesn't do much more than blow warm air. So many people, like me, toss the system to save weight. Others update their AC ($1000-3000) and actually get decent AC.
If your stock system is completely gone, that is compressor, hoses, evaporators, dryer, a new system is going to be probably in excess of $3000 and will entail some serious labor.

I completely agree with Kurt. On the other hand, IF you are handy and want to give it a go you could probably find all the hoses and bits to put a system together. Most would recommend just using the old bits for hose lengths and ends to possibly be reused. You will need the bracket for the compressor.
Try to find the stuff locally. Almost anyone with a Carrera (myself included) probably has a box stuck up in the rafters of the garage with their old bits. It will still run (IMO) big money to get it right. I don't think there are any short cuts to doing it properly. edit: if you want good a/c and you have not bought a car yet, look for a 993. They had a decent system.

I thought some of the advertisers in Excellence or Pano sold a kit containing almost everything (compressor, hoses, condensers, evaporator, accumulator) for around $1500 ... am I mistaken?

I have an 83 SC. Installed a complete Rennaire System, plus Kuel Vent and new Rear Condensor, plus Sanden Compressor. Costs me about 2,200. I did all the work myself. Run 134a in it. Blows 38 degrees at the vent... I live in Houston... Its 92 degrees from May-September... and while I no longer sweat... I certainly wouldnt say its good. It makes it bearable instead of unbearable... Also, It runs hotter as a result of the AC. Driving here with no AC is a non-starter for me.. so the money worth it... I think its a personal choice. If you pay someone to do the install.. probably add 1k to the bill...

yep, I lived in Houston for about 7 years... an a/c is not a choice it's survival.
I live in Socal now and while we have a few hot weeks in summer it's typically dry and probably about 10 to 11 months a year an a/c is really not essential unless you want my wife to ride in it, so not having one actually has it's benefits .
