You need to have a dealer turn it off with their computer. If they are willing, you will likely have to sign a waiver so that they won't be liable for your injuries in the event of a crash w/o seat-mounted airbags.

Couldn't you install a resistor in place of the airbag to fool the computer? I know it can be done in my Audi with seat airbags, and I assume it would be a similar setup. I haven't done it, so sorry I cannot offer more advice. Have you asked on Rennlist or 6speedonline? They seem to have higher traffic for newer 911s.
