FUCH's and Tires for an wide body st flare. Help!

I have a 71 911e full resto with beautiful handmade steel st flares going on it. I'm looking for some info on best tire and wheel sizes.

Whats your suggestion for 15's? 16's? and 17's? whose running what, what offsets? What tire size, what brand? any help is appreciated. The build is more modern than classic looking so it doesn't need to be the classic ideas behind the set. Also im trying to make this daily driving type build so an all weather tire not something thats only good when its not raining or at a constant temp.

This is what I did with flares. Weidman RSR finished 7X15 and 8X15 wrapped in P7's.

The 225 rears on mine now grip great with a 240hp 3.2 but probably won't when we go to my in progress 3.63 with RS 4.0 crank.
