Educate me on differences in oil cooling btwn a 964 and a 3.2

Long time 964 driver with currently a 3.2 which is just getting roadworthy again.
In the 964 I could set my clock to the moment the oil thermostat would open and the needle would drop a bit.
No such thing in the 3.2 it seems. I refubished the oil cooling system (new lines, cleaned thermostat, refurbished fender cooler etc).
After a spirited 20 minutes drive the line to the cooler is warm (not burning hot) and the return line lukewarm. Needle in the middle, not where I had it on the 964 3.6 (7 o'clock).
I don't want to venture to far with a possible engine cooling issue so I'd like to find out what a normal behaviour would be.
