Post Wheel/tire combo

Here I go again. I have settled on 16x6 black center Fuchs wheels from Wheel enhancements for my '74 911. The current setup is Cookie Cutters with 215x60 15 Dunlops. For the 16" wheels should I go for 215x50 16's or 55's? Or something else. For 16" tires, there is not much for 215's. There seems to be more 205's. Any tire recomendations out there? Any thoughts on purchasing wheels from Wheel Enhancement? Are they as good as advertised on refurbished wheels? Is it worth buying tires from them and getting the wheels ready to bolt on?
Lastly, I will be selling my cookie cutters with the Dunlops. There are in mint condition and the tires are fairly new. (20% worn) Anyone interested can e-mail me.
