This what I ended up with and it has been working OK for a few years now.
There are probably other combinations of parts that will work, but I was guided by the parts I had available or could make at home.
Your question was regarding which starter. As long as you position the ring gear in the correct place, the original Bosch unit will work or its HiTorque equivalent.

I am guessing you made those spacers yourself?

Maybe a stupid question but why make 2+5mm and not a 7mm in total?

I assume because a 7mm spacer would not achieve the same effect. The spacers, as illustrated, are providing spacing for multiple components. If a 7mm spacer were used, certain planes would be altered.

Exactly.
The 5mm spacer sets the correct position of the pressure plate in relation to the flywheel.
The 2mm spacer and the inner ring gear are used to set the correct position of the outer ring gear in relation to the starter pinion.
