What gaskets/o-rings do I need when rebuilding engine?

What are the gasket names, or which gaskets come with engine rebuild kit?

It depends on the engine. It's a long list. I'll start it, I'll forget half of them I'm sure:

1. Oil pump o-rings
2. Case through-bolt o-rings
3. rear main oil seal
4. oil thermostat o-ring
5. breather gasket
6. cylinder base gaskets (copper)
7. barrel compression gaskets (head/barrel gasket)
8. oil cooler o-rings
9. oil-return tube o-rings
10. sump plate gaskets
11. chain box to crankcase gaskets
12. intermediate shaft cover plate gasket
13. crankshaft oil seal, pulley end
14. camshaft to chain box o-ring and gasket
15. chainbox cover gaskets
16. intake/head gaskets
17. carb/injection to intake gaskets
18. injector 0-rings or seals
19. lots of aluminum washers (cam oil lines, oil drain plugs, pressure by-pass valves etc.)
20. valve cover gaskets
21. valve seals

That's just a few of them. There's more. Most everything you need is in the gasket set. Pelican sells the sets too.
